Where the Highlands Meet the Roast

There’s something about the far north of Scotland that sharpens the senses. The raw wind. The big skies. The silence between the storms. It’s here in Wick, Caithness – a place steeped in history and shaped by the elements – that we roast Off-Grid, our signature Highland espresso. 

We chose the name Off-Grid for a reason. It speaks not only to the wild, untamed landscape we call home, but to a mindset — a deliberate step away from the noise. It’s about slowing down, stripping things back, and reconnecting with what really matters: in what we drink, what we make, and how we live. 

But quality doesn’t just happen – it’s crafted. And when it comes to espresso, that means understanding where it came from and why it matters.

Modern espresso, as we know it today, was pioneered in Italy in the 1940s by Gaggia, under the name crema caffè – a nod to the golden layer of foam that defines a well-pulled shot. Unlike other brewing methods, espresso is made using hot water under high pressure, producing a small but intense drink with a viscosity not unlike warm honey. That texture – known as the body – is created by a trio of dispersed phases: emulsified oils, suspended solids, and the crema foam on top. Together, they lock in aroma, amplify flavour, and give espresso its signature mouthfeel.

It’s this concentrated, full-bodied character that inspired Off-Grid. We roast with purpose – dialling in flavours that punch through milk and hold their own as a straight shot. It’s not just about strength; it’s about depth, balance, and integrity in every cup.

For some, off-grid means camping without power or connection. For us, it means something deeper – a commitment to doing things differently, with care, craft, and a little northern grit.

While our roots are proudly Highland, our beans travel a long way to get here. We work with ethically sourced green coffee from small farms and cooperatives around the coffee belt. Every origin is chosen with care – not just for flavour, but for traceability and sustainability.

Once it lands in Caithness, we roast it with precision in our Wick roastery – balancing the science of heat with the art of taste.
