Understanding Cupping Scores: Beyond the Number
Share
At 58 Nørth Coffee Roastery, we focus on roasting only the best beans. Quality is at the heart of everything we do, and in 2026 we’re proud to launch our coffee education series—a space where we share knowledge about all things coffee, from farm to cup.
We’re starting with one of the most common—and most misunderstood—terms in specialty coffee: cupping scores.
When you see a coffee labeled with a score like 85, 87, or even 90, it’s easy to assume that a higher number automatically means a better coffee. But cupping scores are more than just a number on a bag. At 58 North, we believe that understanding what’s behind the score helps you choose coffee that truly matches your taste.
Let’s break it down.
What Is a Cupping Score?
A cupping score is a standardized way to evaluate coffee quality through tasting. It is most commonly based on the Specialty Coffee Association (SCA) cupping protocol, which is used worldwide by producers, roasters, and Q Graders.
During a cupping session, coffees are brewed without filters or brewing devices so that nothing interferes with the coffee’s natural characteristics. Each coffee is then evaluated across multiple sensory categories, including:
- Aroma
- Flavor
- Aftertaste
- Acidity
- Body
Each category contributes to a final score out of 100 points. Coffees that score 80 points or above are classified as specialty coffee, meeting a globally recognized quality standard.
Why Cupping Scores Exist
Cupping scores were created to bring consistency and transparency to the coffee industry. They allow professionals to:
- Compare coffees across different origins
- Identify quality and defects objectively
- Communicate value clearly between farmers, importers, and roasters- Track improvements in processing and roasting
At 58 North Coffee Roastery, cupping scores help us evaluate quality—but they never replace taste, context, or intention.
What Do Cupping Score Ranges Mean?
Cupping scores are often grouped into ranges to help describe overall coffee quality. While the scoring system is precise, these ranges offer a practical way to understand what to expect in the cup.
80–84 points
Coffees in this range are considered solid specialty coffee. They are clean, well-processed, and free of defects. Flavor profiles are usually approachable and balanced, making them great for everyday drinking.
85–89 points
This range represents exceptional coffees. You’ll often find more complexity, clarity, and distinct flavor characteristics such as vibrant acidity, layered sweetness, or unique aromatics. Many single-origin offerings fall into this category.
90+ points
Coffees scoring above 90 are rare and extraordinary. These lots are often produced in small quantities and may showcase highly expressive varietals, experimental processing, or exceptional terroir. They are evaluated not just for quality, but for uniqueness and character.
While these ranges are helpful, they don’t tell the full story of how a coffee will taste to you.
Why a Higher Score Doesn’t Always Mean a Better Coffee
A higher cupping score reflects technical quality, not personal preference. Coffee enjoyment is subjective, and what excites one drinker may not suit another.
For example, a bright, floral, high-acidity coffee may score very high on the cupping table, but someone who prefers rich body and chocolate-forward flavors might enjoy a slightly lower-scoring coffee more.
Other factors also influence how a coffee tastes at home:
-Brewing method
-Roast level
-Water quality
-Personal sensitivity to acidity or bitterness
At 58 North Coffee Roastery, we believe the “best” coffee is the one that fits your taste, your routine, and how you enjoy your cup.
How We Use Cupping Scores at 58 North Coffee Roastery
Cupping scores play an important role in how we select and roast our coffees—but they are only one part of the decision.
We use cupping to:
- Assess green coffee quality before purchasing
- Understand how origin, variety, and processing affect flavor
- Evaluate roast profiles and make adjustments
- Ensure consistency from batch to batch
However, we don’t chase scores. We look for coffees that are balanced, expressive, and enjoyable across different brew methods. Our goal is to roast coffees that perform just as well in your kitchen as they do on the cupping table.
Quick Takeaway
Cupping scores are a valuable tool for measuring coffee quality, but they don’t define your experience. Understanding the score helps you make informed choices—but discovering what you love is what matters most.
At 58 Nørth Coffee Roastery, we roast with intention, transparency, and taste in mind—always beyond the number.
