Ratnagiri Estate – Vacuum Fermented Natural (India)

From the misty slopes of the Western Ghats, the renowned Ratnagiri Estate continues to push the boundaries of Indian specialty coffee.

This lot is a Cauvery varietal grown at 1350–1400m and processed using an advanced 56-hour vacuum fermentation with yeast and lactic acid bacteria, followed by slow drying over 29 days on raised beds. The result is an exceptionally clean yet expressive natural coffee shaped by precision fermentation.

Expect a cup that reflects both innovation and terroir:

  • Wine-like, fermented complexity
  • Silky body with layered acidity
  • Long, clean, aromatic finish

Carefully harvested at peak ripeness (Brix 25.2), this coffee is a showcase of controlled fermentation and meticulous post-harvest care.

Best enjoyed as an esspresso or  filter coffee to highlight its clarity and fruit-forward profile, though it can also produce a vibrant, modern espresso when developed slightly further.
